Yummy, Yummy Cookie!

We made cookies when Zane got up from his nap today!  He gets to eat a sweet dessert twice a week and I thought it would be fun to give him one of his favorites...cookies!  And while I mixed them, I fed him chocolate chips!!!  That was so much fun too!  He loves chocolate chips.  I didn't overdo it, but I wanted him to enjoy baking with me!  Probably not a good excuse, but I enjoyed it.  :)

Christmas Cookies

I really really like baking during the holiday season!  It's so fun and it's usually stuff that you only make once a year!  I got in the mood yesterday and tried a new recipe.  Actually, I got the idea from one site for Chocolate Peppermint Cookies, but didn't have the refrigerated dough that they required, so I looked up some that I could make from scratch.  I found this recipe, and used the frosting from the chocolate peppermint cookies.

I made the chewy double chocolate peppermint cookies in mini form, put a marshmellow on top, baked it an additional minute, cooled them and then frosted them.  Then, a certain 1 year old, added the sprinkles on top with my help!  It resulted with chocolate frosting on my pants and on him, and then he wanted to eat one sooo bad, so after we were done, I gave him one of the frosted ones.  After that, he got a bath!

M&M Cookies

2 cups plus 2 T all purpose flour
1/2 t baking soda
1/2 t salt
12 T unsalted butter, melted and cooled until just warm
1 c brown sugar, packed
1/2 c granulated sugar
1 large egg, plus 1 egg yolk
2 t vanilla extract
1 cup M&Ms

Preheat oven to 325.

Mix dry ingredients together.  Mix butter and sugars together with electric mixer or by hand until thoroughly combined.  Beat in egg, yolk, and vanilla until combined.  Add dry ingredients and beat at low speed until just combined.  Stir in M&Ms by hand.

Take 1 T dough, put on cookie sheet lined with parchment paper.  Put another 1 T dough on top of it.  They will be stacked high.  

Bake 15 minutes until light golden brown and outer edges are starting to harden, but the center is still soft and puffy.

Cool cookies before removing from parchment paper.

Ready to eat!

Today I was going to make some chocolate chip cookies, but saw a recipe that had the same cookie recipe that I had already started making, but they used M&Ms!  We just happened to have some so I thought I'd give it a try.  They are so good.
