Butternut Squash Spinach Lasagna Rolls

I tried this recipe tonight and we both thought it was delicious!  I can't really speak for the little one.  He ate it, but I don't think it was a favorite.

I used whole wheat lasagna and about half a container of ricotta cheese, and half the spinach.  It made 6 rolls.  It really is a good, healthy recipe.  Give it a try!  The butternut squash seems to give it a little bit of a sweet flavor.  I was also surprised that you could cut it with a fork and it was firm-it didn't fall apart. 

Jeff was gone earlier in the week for two nights.  The reunions are always sweet!
