Pumpkin Spiral Cake

It is officially called a Pumpkin Roll, but Jeff didn't like that name, so we changed it!  I've never made a cake like this and it was really fun and really really easy to make.  I found it here.

Pumpkin Spiral Cake

Cake
1 cup sugar
1 tsp. soda
3/4 cup flour
2/3 cup pumpkin puree
 3 eggs
1/2 tsp. cinnamon
1/2 cup pecans

Mix everything except nuts. Grease & wax cookie sheet.  Pour into pan & sprinkle nuts.  Bake 15 min. at 375 degrees.  Roll into towel for about 10 minutes. 

Filling
8 oz. cream cheese
1 tsp. vanilla
1 cup powdered sugar
2 tbsp. soft butter

Mix well while cake is baking.  After cake is rolled into a towel for 10 minutes, unroll and spread filling on top.  Roll cake again, cool, and refrigerate.

Poor Little Pumpkin

I was watering yesterday in our backyard and was surprised to see a pumpkin growing in between the fence and the fence post!  Jeff wiggled it out, but we're not sure if it's going to make it!  It definitely has a few problems.

We have two normal looking pumpkins too.  :-)  I know it's too early to grow pumpkins, but last year we had success and had them ripe by May.  I tried to grow some in the fall, but they didn't grow-it may have been too dry.  Anyway, I was a little late planting them this year, so I'm not sure if I will be picking them before Zane  is born, or if Jeff will!

We're also trying to grow some cantaloupe. 
We put a board under them to try to keep it out of the dirt and bugs.
